All of our beers are artfully crafted on-site, using the finest ingredients available. We also try to support local hop and malt farms as much as possible.  All of our beers that are brewed on-site are unfiltered and gluten reduced to less than 20 PPM (parts per million).

Golden Gaze
Cream Ale - 4.5% ABV
Inspired by the pre-prohibition American style, this Cream Ale was brewed with American 6 Row barley, flaked barley, flaked corn and local River Hill Nugget hops. This brew is crisp, clean and very refreshing!

Stochl Pils
Czech Pilsener - 5.0% ABV
This Czech style Pilsener is brewed with Prostejov Pilsen malt, Munich Malt, small amount of dextrin malt and Saaz hops. Soft, crisp, complex and well-rounded - yet refreshing! Named after my Great Grandfather, Karel Stochl - we wanted to brew a beer he would be proud of! Na zdraví!

Sun Down Wheat

Imperial American Wheat - 6.9%

A soft and fluffy Imperial American Wheat ale brewed with coriander, sweet orange peels, tart cherries, sweet cherries, blueberries, tangerines, lemons and limes. Aromas and flavors of blueberries, cherries, fresh cut citrus with a tinge of coriander spice. Crisp, fruity and refreshing.

Dusk 'Til Dawn
Dark Czech Lager - 5%
A part of our Foeder Series, aged for 8 weeks in a wooden fermentation vessel, this full-flavored Dark Lager was brewed with Saaz whole leaf hops, Czech Pilsener Malt and various specialty malts, adding flavors and aromas of caramel, toffee and chocolate. Light and drinkable, yet full of complex oaky flavor.

Czech The Forest
Amber Lager - 5.5% ABV
A Czech style amber lager brewed with Czech Pilsen malt, Double Roasted Crystal malt, Chocolate malt and Saaz Hops. Full of flavor, yet very light and smooth.

Lemon Thyme Hibiscus Saison
Saison - 6.0% ABV
We took our 2 beloved saisons and made them into one! We bring you Lemon Thyme Hibiscus Saison. A tart saison brewed with organic lemon peels, organic lemon thyme and organic hibiscus petals. The hibiscus adds a delicious floral flavor and aroma with a bright red color. The lemon thyme adds a refreshing lemon and delicate herbal note with the lemon peel and yeast profile tying everything together for a bright, dry and effervescent saison. Quite refreshing on a hot summer day!

Our Into the Den Imperial Stout Base aged on top of maple syrup, cinnamon, chocolate, vanilla and coffee. Notes of maple syrup drizzled French toast, vanilla and mochaccino . Here is to the most important meal of the day! Cheers!

Triple German Chocolate Cake Stout
Imperial Sweet Stout - 10.2%ABV
Contains Lactose/Dairy 
Our beloved Double German Chocolate Cake Stout turned up a notch from 8.2%ABV to 10.2%ABV. While amping up the alcohol, we thickened the body to add even more creaminess to this beauty. This decadent, Imperial Sweet Stout is brewed with organic coconut, cacao nibs, vanilla and lactose with the chocolate malt adding a nutty flavor of pecans/walnuts.

Gettin' Toasty  (New On Tap!)

American Brown Ale - 5% ABV

Our American Brown Ale brewed exclusively with local Lion Bines cascade hops. This brew has a blend of various caramel malts, honey malt, Munich malt and brown malt. The cascade hos add a balanced bitterness with delicate notes of grapefruit, resin, and pine while colliding with malt flavors of dark caramel, chocolate toffee, King's Hawaiian rolls and toasted bread crusts perfect for cozying up next to a fire on a cold ,crisp winters night.

Pumpkin Head 
Autumn Seasonal Ale - 7.5% ABV 
It’s that time of year where the leaves are changing, cooler mornings/evenings, farmers are harvesting their crops and pumpkin patches have matured and are ready for picking. Our pumpkin head ale starts with puréed pumpkins in the mash and kettle along with an organic blend of ginger, clove, nutmeg and cinnamon. Additional spices including vanilla are added to invoke that whipped cream garnish that pumpkin pie is famous for. We then slightly carbonate and put onto our nitro draft system. This is where the nitro brings the pumpkin head ale to life. Liquid pumpkin pie in a glass!

Hazy Pale Ale - 5.0% ABV
New Beginnings #8 is brewed with Pilsner Malt, raw wheat, 100% Citra hops and Kveik yeast. This brew boasts a hop aroma and flavor profile of freshly sliced oranges, limes, gooseberries, candied papaya and tangy apricots.

Hazy IPA - 6.2% ABV
New Beginnings #9 is brewed with Pilsner malt, raw wheat, Mosaic Lupomax hops, HBC-856 hops and a blend of English Ale yeast strains. This brew has incredible hop flavors and aromas of pink guava, candied mango, orange juice and juicy blueberries. This pillowy soft IPA is extremely crushable!

Dub's IPA

American IPA - 6.7% ABV

Dub’s IPA has a simple grain bill of American 2-Row Barley, with small amounts of crystal and dextrin malts. Hopped with local River Hill Nugget hops, Pacific Northwest Citra Lupomax and Simcoe hops. A very soft, smooth IPA with notes citrus, tropical fruit and pine. Our head brewer, Derek, had a nickname growing up that all started from Tom Kampel of Kampel Enterprises (Kampel Enterprises made and donated our front Wolf Sign, Copper Wolf Head, Bathroom signs, tap handles and kitchen expo line). Tom called Derek, D-Dub’ya and eventually just Dub.

Wolftasm 

Hazy Double IPA - 8.6%

We took our beloved New Beginnings #5 experimental Double IPA and amped it up with Phantasm (a patent pending thiolized powered Sauvignon Blanc grapes from Marlboro, New Zealand) and quadrupled our mash hopping rates. The Phantasm with Cosmic Punch yeast unleashes an incredible amount of passion fruit, pink guava and freshly squeeze citrus flavors and aromas. This beer pours a beautiful orange color almost like OJ. As the beer passeS your nose you will get an initial rush of intense citrus and passion fruit followed by pink guava, peaches, and mangoes. It is so incredibly fragrant that it stings your nostrils with delight. The flavors follow suit while maintaining a creamy, pillowy, and soft mouthfeel. Pallet coating tropical citrusy fruit salad entices your every sip. We hope you enjoy this creation as much as we do.

Derailed  
Hazy Double IPA - 8.0% ABV The beer that started it all. After falling 30+ feet off a railroad track in 2013, breaking 25 bones and collapsing a lung this recipe was developed while in the hospital and is one of our most award-winning beers. Our tap handle was created with the plate and screws that once stabilized Derek’s leg. This East Coast/West Double IPA was brewed with the almighty Simcoe, Amarillo, Citra and our absolutely favorite hop from Australia - Vic Secret. Huge aromas of pineapple, mango, grapefruit and pine leading to soft, palate coating flavors of intense citrus, papaya, and pineapple with lingering notes of pine and grass combining with a balanced crackery malt sweetness.

The Wolf of Market Street  
Triple IPA - 10.0% ABV
When calculating and formulating our IMO (Initial Malt Offering) we began with a massive tower of pale malt, followed by tons of oats and wheat for a soft and silky mouthfeel. The mash tun was obliterated with over 2.2lbs per BBL of local NY Cascade followed by a HUGE dose of local NY Cascade hop sauce. Don’t let the Cascade fool you to sell short. The NY cascade hops provide massive gains when partnered with Omegas Cosmic Punch, Simcoe Cryo hops and Citra Lupomax leading to GIGANTIC dividends of passion fruit, pineapple, pink guava, and sticky pine needles. This brew is definitely one you want in your portfolio! Cheers!

The Beat 'Gose' On

Gose (Sour German Wheat) - 4.6% ABV

Brewed in honor of Peyton Walker we will be donating the proceeds from this beer to the Peyton Walker Foundation. This brew starts with oodles of fluffy wheat varieties & German Pilsner malt, Himalayan Red Sea salt, Coriander, Electrolytes, Blackberry, Bluberry, Black Currant, Raspberry, Tart Cherry & Watermelon. We “kettle soured” this beer with our favorite probiotic drink to give it a nice acidity which is balanced with the sea salt & other electrolytes. These fruits were chosen for their recovery properties - anti inflammatory, polyphenols, with plenty of natural occurring vitamins as well as making it purple in honor of Peyton. This was fully fermented on the fruit to reduce the amount of residual sugar as well as creating a refreshing & crisp finish.

Secluded Paradise 
Heavily Fruited Sour - 8.0% ABV
A part of our Sorbet Series - This brew starts off with a mountain of Pale Malts, Golden Naked Oats and Torrified Wheat followed by our kettle souring process with our favorite probiotic drink. Immediately after primary fermentation we added 1,188 pounds of tropical fruit and over 100 pounds of lactose free soft serve vanilla ice cream and re-fermented to increase the alcohol and bind all those flavors together. This luscious fruit blend consists of passionfruit, banana passionfruit, papaya, mango, pink guava, coconut and pineapple. HUGE aromas and flavors of tropical creamsicle! Sit back, relax and find your secluded paradise!

Blueberry Sorbet  (New On Tap!)
Heavily Fruited Sour - 8.6% ABV
A part of our Sorbet Series - this dessert Sour Ale starts with a blend of our favorite oats and wheat. The wort goes through a 2 day kettle souring process and is then boiled with brown sugar to give that pie crust essence. We then age this decadent Sour Ale on over 1,140 pounds of blueberries and a tad bit of vanilla and marshmallow to make the blueberries pop while adding a smooth whipped cream finish. Like a slice of blueberry pie in a glass!

Quad Berry Sorbet
Heavily Fruited Sour - 9.0% ABV
A part of our Sorbet Series - A dessert sour ale that starts with a luscious blend of 2Row, golden naked oats and torrified wheat. The wort goes through a 2 day kettle souring process with our favorite probiotic drink, which is then boiled and fermented clean. We then age this sour beauty on 352 pounds of blackberries, 352 pounds of blueberries, 270 strawberries, 270 pounds of raspberries and a tad bit of marshmallow fluff to make all the berries pop while smoothing everything out. The 1,244 pounds of fruit added during the aging/fermenting process increased almost 3% more alcohol to the final beer, bringing it to a final undetectable ABV of 9%.

Fruited Hard Seltzer - 5.3% ABV Fruited Hard Seltzer - 5.3% ABV
Just in time for Cinco de Mayo! A part of our Wolf Paws Hard Seltzer Series - this rendition celebrates the incredible Margarita! Brewed with Corn Sugar, Sea Salt, Key Limes, Columbian Limes and Oranges. Glasses and crowlers are sprayed with a mixture Hidden Stills Agave Tequila and Faber Triple Sec prior to pouring. Aromas and flavors of fresh cut and juiced Key Limes, Columbian Limes and Oranges, Tequila, and Sea Salt. Tastes just like a hand made Margarita Cocktail!
